An extremely important point. As Robert McKee says in his excellent screenwriting book Story (which also has great principles universal to all fiction writing) "Dialogue is not conversation". In real life, we make poor word choices, inane repetitions, interrupt at badly timed moments, with plenty of umming and ahhing. Not fun to read. :)
