I actually think the only one that's really better is The Two Towers. The pacing of the first film is better in the shorter cut, and much of the material added to the third film is unnecessary or redundant. For instance, the Mouth of Sauron only makes sense to include if you maintain the structure of the novels, when it appears Frodo/Sam are dead and the ring captured, whereas in the films it cuts between plotlines, so we know that isn't the case. One thing I would have added back into The Return of the King is the Faramir/Eowyn love story. For those scenes, I'd have happily sacrified some of the endless battle to keep the running time down.
