I see your point about classic westerns (and of course they are referenced here, including High Noon), but I do think there is a sense of mild embarrassment about the Rolex (not her status in the company, per se). Ellis literally says: "Are you embarrassed?" when he says she should show John the watch, and she says "Later". Perhaps embarrassment is the wrong word. More than her priority in that moment is talking to John, not showing off trinkets and status symbols. She's just being modest about her career achievements, perhaps.
