I'm with you on The Deer Hunter. I seem to recall one critic saying that the wedding scene went on so long, he felt embarrassed that he didn't bring a present.
The Shape of Water? I liked it, but I prefer Pan's Labyrinth and various other Guillermo Del Toro films (his recent excellent stop-motion take on Pinocchio, for instance).
However, I'm not with on Chinatown, which I consider an absolute masterpiece, and will hear nothing against, dammit. It's superb.
What do I consider overappreciated? How about Everything Everywhere All At Once (or, as I call it Everything Interminable All At Once).
