Roger Deakins is a great cinematographer, no question. Not just for his work with the Coens, but for films like The Assassination of Jesse James by the Coward Robert Ford and his visual consultancy work on the How to Train Your Dragon films. To the point of this article re: unobtrusive great cinematography, from his back catalogue I'd select Prisoners. It has a great, rainy November feel, but without drawing attention to itself in that respect.
