Talladega Nights - I'm not a huge fan, but Christopher Nolan is, so you'll have to answer to him for this one.
The Shining - A horror classic. The final shot either implies reincarnation, time travel, parallel universes, or something supernatural. Personally, I like the ambiguity.
The Great Outdoors - It's adequate at best.
Zoolander - A one-joke film, as you say. I've never been a huge fan.
Pulp Fiction - This and Reservoir Dogs are the best films Tarantino has made and both are rightly considered classics.
Terminator 2 - I love it, but the original is better.
Police Academy 3 - I have a soft spot for the original (purely because of this incident from my childhood) but other than that, I'm not a fan of the series.

Pirates of the Caribbean - The first one is OK, albeit overlong and massively narratively flawed. Johnny Depp makes the film work. The rest are rubbish.
The Usual Suspects - An outstanding thriller with an outstanding twist that benefits from repeat viewings. Can't say I agree with you here at all.
