Luke Skywalker immediately got a replacement hand, so you didn’t have to think too hard about the fact his father cut it off. The same thing happens to Darth Vader in Return of the Jedi when Luke cuts off his right arm. But since that part of him is already cybernetic, it does not matter, even if Darth Vader lets out a scream of pain.
